Sesame Miso Chicken Ramen

Ingredients:
- 6 tbsp AYAM™ Sesame Oil
- 3 tsp ginger, julienned
- 3 shallots, finely sliced
- 3 tbsp toasted white sesame seeds
- 450g chicken breast
- 3 tsp chilli bean paste
- 6 tbsp miso
- 3 tbsp sugar
- 3 tbsp mirin
- 12 cups chicken stock
- 300g AYAM™ Ramen Noodles
Garnish (to taste):
- Bean sprouts
- Soft-boiled eggs
- AYAM™ Corn Kernels
- Nori
- Spring onion
- AYAM™ Crispy Chilli Oil
- Pickled red ginger
- Lime wedges
Method:
- In a heavy-based pot over medium-high heat, add sesame oil and sauté shallots, garlic, and ginger for about 4 minutes until fragrant.
- Add chicken breast and cook util browned, about 6-8 minutes.
- Stir in chilli bean paste, miso, sugar, mirin, and chicken stock. Simmer for 10-15 minutes to develop flavour.
- Meanwhile, cook ramen noodles according to package instructions.
- To serve, place noodles in bowls, ladle over the broth and chicken, and top with your choice of garnishes.
