Sesame Miso Chicken Ramen

Serves 3 pers | Prep 20 minutes | pot 25 minutes
 

Ingredients:

  • 6 tbsp AYAM™ Sesame Oil
  • 3 tsp ginger, julienned
  • 3 shallots, finely sliced
  • 3 tbsp toasted white sesame seeds
  • 450g chicken breast
  • 3 tsp chilli bean paste
  • 6 tbsp miso
  • 3 tbsp sugar
  • 3 tbsp mirin
  • 12 cups chicken stock
  • 300g AYAM™ Ramen Noodles

Garnish (to taste):

  • Bean sprouts
  • Soft-boiled eggs
  • AYAM™ Corn Kernels
  • Nori
  • Spring onion
  • AYAM™ Crispy Chilli Oil
  • Pickled red ginger
  • Lime wedges

 

Method:

  1. In a heavy-based pot over medium-high heat, add sesame oil and sauté shallots, garlic, and ginger for about 4 minutes until fragrant.
  2. Add chicken breast and cook util browned, about 6-8 minutes.
  3. Stir in chilli bean paste, miso, sugar, mirin, and chicken stock. Simmer for 10-15 minutes to develop flavour.
  4. Meanwhile, cook ramen noodles according to package instructions.
  5. To serve, place noodles in bowls, ladle over the broth and chicken, and top with your choice of garnishes.
