600g new potatoes, thickly sliced
2 cups bean sprouts
1 bunch rocket
2 small carrots, cut into thin straws
410g can chopped baby corn, drained, halved
1 avocado, sliced
1 small red chilli, finely chopped
1 tablespoon sugar
2 cloves garlic, crushed
2 tablespoons AYAM™ Fish sauce
1/2 teaspoon AYAM™ Sesame Oil
1/3 cup lime juice
1/4 cup rice bran oil
MethodBoil steam or microwave potatoes, cool.
Combine in a large bowl with sprouts, rocket, carrots, baby corn and avocado. Add the dressing, toss to combine.
To make the dressing: Combine all ingredients.
